Baked Cod with Tomatoes

This easy oven-baked cod recipe teams up with cherry tomatoes, lemon, and garlic to deliver sweet, tender perfection to your plate in under 30 minutes. Dinner? Done. Chef vibes? Achieved.

Ingredients

  • 1-2 tbsp Dan-O's SEA-soning
  • 4 cod filets, about 1" thick
  • about 1/4 cup extra-virgin olive oil
  • 1 cup cherry tomatoes
  • 1 lemon, sliced, plus more for garnish
  • 2 garlic cloves, slightly crushed
  • 3 sprigs thyme
  • fresh thyme or parsley, for garnish
  • fresh ground pepper
  • small potatoes (about 1 inch, or cut larger ones into cubes) - optional

Preparation Instructions

  1. Preheat the oven to 400°F.
  2. Pat cod filets dry with a paper towel. Sprinkle Generously® with Dan-O's SEA-soning.
  3. In a baking dish, pour in olive oil, add cherry tomatoes, lemon slices, garlic, and thyme. Mix it up and spread into an even layer. Add in the small potatoes here if you got em, mixing them into the oil.
  4. Place cod pieces into baking dish on top of all that goodness. Sprinkle with some fresh ground pepper.
  5. Bake about 25 to 30 minutes, until fish is opaque and flakes easily with a fork. Time will depend on thickness of filets.
  6. Serve garnished with thyme or parsley, lemon slices, and a drizzle of sauce from the pan.
