This delightful fresh soup is both flavorful and nutritious! The combination of ginger, carrots, and SEA-soning™ creates a delicious and healthy dish that can be enjoyed hot or cold.
Ingredients
2 tbsp Dan-O's SEA-soning™
4 tbsp olive oil
1 cup sweet onion - diced
3 cloves garlic - diced
1.5 lbs mini carrots - diced
4 cups low-sodium vegetable stock
1-2 tbsp minced fresh ginger (depends how spicy you like it)
1/4 tsp salt
1/4 tsp pepper
Preparation Instructions
Heat oil in pot or deep skillet large enough to hold all ingredients.
Add onion and garlic to the pot, sauté about 3 minutes or until onions are transparent.
Add the carrots and cook uncovered, stirring, about 5 mins or until slightly softened.
Add the vegetable stock, ginger and Dan-O's SEA-soning™.
Bring to boil, lower heat, stir and simmer for about 45 mins or until carrots are fork tender.
Carefully move the soup to a blender and puree until smooth.
Return soup to pot and reheat, add salt and pepper to taste.
