Ingredients

  • 1 tsp Dan-O's Preem-O Seasoning
  • 1 tbsp Dan-O's Original Seasoning
  • Leftover turkey breast, cut into 1/2-inch thick slices
  • handful of mushrooms, thinly sliced
  • Leftover turkey gravy
  • 1 tbsp fresh thyme
  • 1-2 tbsp Dry white wine
  • 1 tbsp olive oil
  • 1/2 cup all-purpose flour
  • 1 egg
  • 1/4 cups dry bread crumbs
  • 1/4 cup canola oil or olive oil

Preparation Instructions

  1. Heat the olive oil in a skillet over med-high heat. Add the mushrooms and cook until golden brown about 2-3 minutes.
  2. Add 1 cup of leftover turkey gravy, thyme and enough wine just to dilute slightly - maybe a tbsp. Cook until heated through then set aside and keep warm on low heat.
  3. Set up your dredging station: Pour the flour on a large plate and season with a sprinkle of Dan-O's Original and Preem-O (I found it hard to get the seasoning to stick when in the flour, so you can omit this if you like).
  4. Whisk the egg with 1 tsp Dan-O's Preem-O. Pour into a shallow dish.
  5. Pour the bread crumbs on a plate and mix with 1 tbsp Dan-O's Original.
  6. Heat 1/4 cup of canola oil in a deep-ish skillet until it just begins to shimmer.
  7. Dredge the leftover turkey breast in the flour first, then dip in the egg wash letting any excess drip off and then dredge in the bread crumbs.
  8. Place turkey slice in the oil and cook until just golden brown on both sides.
  9. Remove from pan and place on a plate lined with paper towels.
  10. Place turkey breast on serving plate and spoon some of the mushroom gravy on top.
  11. Use up some leftover veggies as a side or throw together a salad and enjoy!
