Ingredients

  • 4 tbsp Dan-O’s Cajun Cree-O
  • 2 Cornish hens
  • Avocado oil spray

Preparation Instructions

  1. Preheat your smoker to 285°F.
  2. Prepare the Hens by spatchcocking them by removing the backbone for even cooking.
  3. Spray the bone side of each hen with avocado oil. Generously season the bone side with Dan-O’s Cajun Cree-O, allowing the flavor to soak into the meat. Flip the hens over and spray the skin side with avocado oil. Season the skin side with Cajun seasoning as well.
  4. Place the seasoned hens on a raised grid tray for smoking.
  5. Smoke the Cornish hens for 2 hours or until they reach a safe internal temperature.
  6. Once cooked, remove from the smoker, let rest for a few minutes, and serve hot.
