Serve this up with some Jalapeño Cornbread for the ultimate New Year’s Day meal!

Ingredients

  • 2 tbsp Dan-O's Cajun Seasoning
  • 2 cans black eyed peas (15.5 oz - salt added only)
  • 2 tbsp olive oil
  • 1 onion - diced
  • 3 cloves garlic (3 tsp) - diced
  • 1/2 bunch celery - sliced
  • 6 cups vegetable broth
  • 12-16 oz. fresh greens (collard, mustard or kale - fresh, clean and chopped without stems)
  • 1 bay leaf
  • 1 cup ham chunks (cooked) - optional

Preparation Instructions

  1. Add olive oil to a large pot. Stir in your onion, garlic and celery and cook about 5 minutes.
  2. Add the greens, stir and cover for 5 minutes.
  3. Stir in the broth, Dan-O's Cajun Seasoning and the bay leaf.
  4. Cook on low-med heat for 20 minutes. Add ham cubes here if desired.
  5. Remove the bay leaf and add drained beans and stir, let warm for 5 minutes with heat off.
  6. Smash some of the beans for added thickness if desired.
  7. Serve with cornbread or biscuits!
