Jalapeño Cornbread

Cornbread often gets relegated to the side, but when done right, it can easily steal the show as the star of your meal. By incorporating Dan-O’s Jalapeño Cheesoning®, you bring just the right amount of heat that elevates the flavor profile without overpowering it. The jalapeño kick pairs beautifully with the richness of whatever cheese you choose to add. In this recipe, we went for mild cheddar, which adds a creamy, melty texture that balances out the spicy notes. The result is a cornbread that’s not just a complement to your main course but a crave-worthy dish that could be the centerpiece of any table.

Ingredients

  • 1/4 cup Dan-O’s Jalapeño Cheesoning®
  • 2 ears of corn (kernels taken off the cob)
  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 1 cup shredded cheddar cheese
  • 2 boxes (8.5 oz each) Jiffy Cornbread Mix
  • 2/3 cup milk
  • 2 large eggs
  • 3/4 stick butter (divided)
  • 2 jalapeños (sliced for topping)

Preparation Instructions

  1. Preheat your oven to 400°F.
  2. In a cast iron skillet, melt 1/2 stick of butter over medium heat. Add the corn, red bell pepper, and diced red onion. Sauté for about 10-15 minutes, or until the corn is golden brown and the vegetables are tender.
  3. While the vegetables are cooking, prepare the Jiffy cornbread batter. In a large bowl, add the jiffy cornbread, then whisk together the milk and eggs until well combined. Then, add the Dan-O’s Jalapeño Cheesoning® and the shredded cheddar cheese and mix until evenly distributed.
  4. Once the corn and vegetables are cooked, remove them from the skillet and fold them into the Jiffy cornbread batter.
  5. Add another tablespoon of butter into the cast iron skillet to grease it. Pour the combined batter into the skillet, spreading it evenly.
  6. Arrange sliced jalapeños on top of the batter as desired.
  7. Place the skillet in the preheated oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Allow the cornbread to cool slightly before slicing. Serve warm as a delicious side dish or snack!
