Go shorty, it’s your birthday! We’ve got a Dantastic recipe for you today with these beef short ribs! These are tender, juicy, fall off the bone short ribs with a savory gravy to pour over top. Oh, my mouth is watering just thinking about it. These are a fantastic dinner and you can serve them with a variety of great dishes. Our roasted brussels sprouts and smashed & mashed potatoes are great pairings. Especially the mashed potatoes to soak up all that gravy!

What are beef short ribs?

What are beef short ribs exactly? Well they’re a cut of beef taken from the cow’s brisket, chuck, plate, or ribs. As the name implies, they are made up of a short portion of rib bone and then the surrounding meat. The meat varies in thickness, but there are two major types of cuts: the “flanken:”, and the “English”. Flanken cuts are cut across the bone, and leaves the bone just 1 to 2 inches or less in length. Flanken are also called crosscut ribs, Eastern European-style, Hawaiian-style, Jewish ribs, Korean-style, or “kosher ribs”.

While English is cut parallel to the bone and leaves the bone up to 6 inches in length. English are also known as barbecue ribs, braising ribs, or fancy cut ribs.

Ingredients

  • 6.5 lb beef short ribs
  • 8 cloves of garlic
  • 2 cups Madeira wine
  • Dan-O’s Spicy Seasoning, coat
  • Grapeseed oil, coat pan
  • 1 large yellow onion, diced
  • 2 sticks celery, chopped
  • 3 tbsp tomato paste
  • ¼ cup all purpose flour
  • 2 cups beef stock

Preparation Instructions

  1. Coat short ribs heavily with Dan-O’s Spicy Seasoning.
  2. Sear all sides in a skillet over high heat and then set to the side.
  3. In the same pan add onion, celery, tomato paste, garlic, and flour and cook until vegetables are soft.
  4. Add Madeira and beef stock to the pan.
  5. Then place the ribs back in the pan (beef side down).
  6. Coat with more Dan-O’s Spicy Seasoning and cover.
  7. Place in 350° F oven for 2.5 to 3 hours.
  8. Remove ribs from pan and set to the side.
  9. Strain the remaining ingredients from the pan into a large bowl and add liquid back to pan.
  10. To make gravy, reduce over medium heat and skim fat with a spoon.
  11. Pour gravy over ribs. Serve and enjoy!
