Zucchini Boats

Customizing your Zucchini boats are where the magic happens! You can deck them out in all kinds of ways. Want to switch up the meat? Go for it! You can throw in ground Italian sausage, beef, or whatever floats your boat. For this recipe, I opted for ground turkey to keep things on the lighter side, but hey, it’s all about what you crave! And let’s not forget cheese! Mix and match your favorites to create a cheesy masterpiece. The options are endless, and the end result is always Dantastic®. Ingredients

  • Dan-O’s Jalapeno Cheesoning
  • Dan-O’s Original Seasoning
  • 4 medium zucchinis
  • 1 pound lean ground turkey
  • 8 oz low moisture part-skim mozzarella cheese, shredded
  • 24 oz (1 lb) Tomato Basil Sauce

Preparation Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the zucchinis in half lengthwise and trim off the stem ends.
  3. Use a spoon to carefully scoop out the flesh, creating "boats" for the filling.
  4. Place a wire rack in a baking dish and arrange the zucchini boats on top.
  5. Bake in the preheated oven for 20 minutes or until they reach your desired level of tenderness. (For a crunchier texture, keep them in for less time.)
  6. In a skillet over medium to high heat, add the ground turkey.
  7. Break up the meat with a spatula and sprinkle generously with Dan-O’s Jalapeno Cheesoning® and Dan-O’s Original Seasoning.
  8. Cook until the turkey is thoroughly cooked, then pour in the tomato sauce. Let it simmer for about 2 minutes before turning off the heat.
  9. Generously stuff each zucchini boat with the turkey mixture.
  10. Sprinkle Generously® with Dan-O’s Original and Dan-O’s Jalapeno Cheesoning® over the top, followed by a layer of shredded mozzarella cheese. Add another sprinkle of Jalapeno Cheesoning® for extra flavor.
  11. Switch your oven to broil and return the zucchini boats to the oven for about 3-5 minutes, or until the cheese is melted and bubbly.
  12. Pull the zucchini boats out of the oven, let them cool slightly, and enjoy this delicious dish!
