Lemon Pepper Scallops

Lemon Pepper Scallops

If you love scallops, I'm going to show you how to make some of the best you've ever had right in your own kitchen! The secret is getting that perfect golden-brown sear, then finishing them with rich, melted butter and a little citrus. We're using Dan-O’s Lemon Pepper Seasoning, made with real lemon and orange peel, natural citrus oils, and bold black pepper for a bright, zesty flavor without citric acid or unnecessary fillers. A hot cast-iron skillet gives these scallops that beautiful crust, while a quick butter baste keeps them tender and juicy. Finish with a squeeze of fresh lime, and you've got restaurant-quality scallops in just a few minutes. It's Dan-Good!

Flavors Used:

Ingredients

  • 1 tbsp Dan-O’s Lemon Pepper Seasoning, divided
  • 1 lb large sea scallops, side muscles removed
  • 4 tbsp unsalted butter, cut into small pieces
  • 1 tbsp ghee (clarified butter)
  • 1 tbsp fresh lime juice (about ½ lime)

Let’s Make It!

  1. Prepare the Scallops: Remove the scallops from the refrigerator and let them sit out for 30–60 minutes, keeping total time at room temperature under 2 hours. Pat thoroughly dry with paper towels to remove excess moisture, then arrange them flat on a clean surface.
  2. Season the Scallops: Lightly sprinkle the scallops with about half of the Dan-O’s Lemon Pepper Seasoning and gently pat it into the surface. Avoid coating them too heavily so they can develop a beautiful golden-brown sear.
  3. Heat the Skillet: Place a cast-iron skillet over high heat and preheat for about 3 minutes until very hot. Add the ghee and swirl to coat the bottom of the skillet.
  4. Sear the Scallops: Carefully place the scallops flat in the hot skillet, leaving space between each one. Sear undisturbed for about 90 seconds until a golden-brown crust forms on the bottom.
  5. Flip and Add the Butter: Turn off the heat and flip the scallops. Immediately add the cubed unsalted butter and the remaining Dan-O’s Lemon Pepper Seasoning. Allow the butter to melt in the hot skillet.
  6. Butter-Baste the Scallops: Carefully tilt the skillet and use a large spoon to continuously baste the scallops with the melted lemon pepper butter for about 1 minute. The residual heat will continue cooking the scallops while keeping them tender and flavorful. Cook until the centers are opaque and the scallops reach 145°F.
  7. Finish and Serve: Transfer the scallops to a serving plate and spoon the remaining lemon pepper butter over the top. Finish with fresh lime juice and Yum Yum Get Ya Sum!
