Picture this: two crispy flour tortillas stacked high with a hearty layer of black beans, slathered in taco sauce, and topped with a mountain of gooey cheese, zesty tomatoes, and Dan-O’s Tac-O seasoning. It’s like a fiesta on a plate! And the best part? You can whip this bad boy up in no time.

Ingredients

For the Pizza Base:

  • 1 Tbsp Dan-O’s Tac-O seasoning
  • 2 large flour tortillas
  • 1 can (15 oz) black beans (drained)
  • 1/4 cup water
  • Taco sauce (to taste)

Toppings:

  • 1/4 cup sliced black olives
  • 1/2 cup diced tomatoes (fresh or canned)
  • 1-2 jalapeños, sliced (optional, for heat)
  • 1 cup shredded Mexican cheese blend

Preparation Instructions

  1. Preheat your oven to 425°F.
  2. Place the two large flour tortillas directly on the oven rack or on a baking sheet and bake for about 5 minutes, or until they are crispy.
  3. Add the drained black beans to a bowl with Dan-O’s Tac-O and water.
  4. Use a potato masher to mix this all together and create a black bean paste.
  5. Take one of the baked tortillas and spread the bean mixture evenly to create a base.
  6. Place the second baked tortilla on top of the bean mixture and evenly spread taco sauce over the top tortilla.
  7. Sprinkle the shredded Mexican cheese blend over the taco sauce, followed by a generous sprinkle of Dan-O’s Tac-O.
  8. Arrange the diced tomatoes, sliced black olives, and jalapeños (if using) evenly on top.
  9. Place the assembled Mexican pizza in the preheated oven and bake for about 5 minutes, or until the cheese is melted and bubbly, and the edges of the tortillas are golden.
