Mexican Bean Soup

Ingredients

  • 1 tbsp Dan-O’s Tac-O seasoning
  • 1 tsp Dan-O’s Chipotle seasoning
  • 2 tsp grapeseed oil
  • 1 large onion, finely chopped
  • 1 red pepper, cut into chunks
  • 2 garlic cloves, chopped
  • 1 can chopped tomatoes
  • 1 can of black beans (any other bean will work too if you got em)
  • 1 tsp vegetable bouillon powder
  • 1 small avocado - optional
  • Handful chopped cilantro - optional
  • 1 lime, juiced

Preparation Instructions

  1. Heat the oil in a medium pan and toss in the onion (save a spoonful for your guac later!) and red pepper. Stir and fry for about 5-7 minutes until soft.
  2. Next, add the garlic and Dan-O's Seasonings, letting that aroma fill the kitchen as it cooks a couple of minutes.
  3. Pour in the tomatoes, beans (with their liquid), half a can of water, and bouillon powder. Mix well.
  4. Cover and let it simmer for 15 minutes.
  5. While the soup’s simmering, grab your avocado, scoop out the stone, and chop it up. Either add to the top of your soup like this or make a guacamole. For guac - add the reserved onion, 1 tsp Dan-O's Tac-O, and lime juice and mash it all up until smooth.
  6. Ladle the soup into bowls, top with a dollop of guac or sour cream and chopped cilantro, and dig in!
