You’ve got crispy lemon pepper chicken, buttery saucy noodles, fresh lemon, garlic, and shallot all coming together for a meal that feels a little fancy but is still easy enough for a weeknight. It’s fast, easy, and proof that big-time flavor does not have to be complicated.

Ingredients

  • 3 tbsp Dan-O’s Lemon Pepper Seasoning
  • 1 lb fettuccine nest noodles
  • 2 chicken breasts
  • 1/2 cup flour
  • 2 tbsp high-temperature cooking oil
  • 4 tbsp butter
  • 6oz dry white wine, such as Chardonnay
  • 2 cloves garlic, chopped
  • 1 shallot, chopped
  • Juice of 2 lemons
  • 1/2 cup chicken stock
  • Thin lemon slices, for garnish

Preparation Instructions

  1. Cook the Pasta: Bring a large pot of water to a boil and lightly salt the water. Cook the fettuccine according to package directions until done. Drain and set aside.
  2. Prep the Chicken: Slice the chicken breasts in half. Pound them thin with a meat hammer for even cooking.
  3. Season and Coat the Chicken: Sprinkle generously with Dan-O’s Lemon Pepper Seasoning over the chicken. Coat the chicken with flour, pressing lightly so the flour sticks.
  4. Sear the Chicken: Heat a large pan over high heat. Add the cooking oil. Place the chicken in the pan and cook until browned on the first side. Flip and continue cooking until a lemon pepper crust forms. Remove the chicken from the pan and set aside. The chicken will not be fully cooked at this stage.
  5. Make the Sauce: Reduce the heat to medium. Add the butter, white wine, garlic, and shallot to the pan. Add the lemon juice and chicken stock. Stir to combine and let the sauce come together.
  6. Finish the Chicken: Return the chicken to the pan. Bring the sauce back to a boil. Reduce the heat to medium and let the chicken simmer in the sauce. Flip the chicken and continue simmering for about 2 more minutes, or until fully cooked. Cook until the internal temperature reaches 165°F.
  7. Assemble the Dish: Place the cooked fettuccine on a large plate or serving platter. Top with the chicken and spoon the sauce over the noodles. Garnish with thin lemon slices. Yum Yum Get Ya Sum!
