Get ready for a flavor bomb—this Lemon Pepper Chicken and Leeks is straight-up Dantastic! You’ve got juicy chicken, a creamy, savory sauce loaded with leeks and mushrooms, and crispy roasted potatoes tossed in Lemon Pepper and finished with feta. It’s bright, it’s rich, it’s easy to make, and it brings that bold, zesty kick in every bite. Weeknight dinner? Handled.

Ingredients

  • Dan-O’s Lemon Pepper Seasoning
  • 2 chicken breasts
  • 2 tbsp olive oil, divided
  • 1 leek, washed and sliced
  • 1 cup mushrooms, chopped
  • ½ yellow onion, chopped
  • 1 cup heavy cream or half & half
  • juice of 1/4 lemon
  • 1 tbsp butter
  • 16 oz bag of small potatoes
  • 1 tbsp olive oil
  • ⅓ cup feta cheese crumbles
  • 1/2 cup chopped parsley

Preparation Instructions

  1. First, those potatoes! Toss ‘em in olive oil and plenty of Dan-O’s Lemon Pepper, then spread ‘em out and roast at 400°F for 20–25 minutes. Give ‘em a shake halfway through so they get crispy all around. When they come out, toss ‘em with fresh feta and parsley.
  2. While those are cooking, heat 1 tablespoon of olive oil in a skillet and cook your chicken with a solid sprinkle of Dan-O’s Lemon Pepper. Get it nice and golden on the outside and cooked through—juicy and full of flavor. Set it aside and keep it warm.
  3. Now grab a new skillet and melt 1 tablespoon of butter. Toss in your leeks and onion with a sprinkle of Lemon Pepper and cook ‘em down until soft. Add in the mushrooms and cook until they’re nice and tender.
  4. Pour in the cream, add about a teaspoon more of Dan-O’s Lemon Pepper, squeeze in that fresh lemon juice, and give it a good stir. Let it simmer for about 5 minutes so it thickens up. Want it a little thinner? Splash in some white cooking wine or milk.
  5. Add your chicken back into the pan, spoon that creamy sauce all over it, and let it cook together for a few more minutes so everything soaks up that flavor.
  6. Slice up the chicken, serve it with extra sauce spooned over the top, and plate it alongside those lemon pepper feta potatoes. Yum Yum Get Ya Sum!®
