Cod Bites with Cajun Aioli

Ingredients

  • 3 tsp Dan-O’s Cajun Seasoning
  • ½ cup flour
  • 2 large eggs
  • 1 tablespoon finely chopped parsley
  • 1 1/2 cup panko breadcrumb
  • 2 filets of cod, cut into 1-inch pieces
  • 1 teaspoon lemon juice
  • Cooking spray oil

Aioli:

  • 1 tsp Dan-O’s Cajun Seasoning
  • 1/3 Cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 tsp minced garlic

Preparation Instructions

  1. Heat your air fryer to 400°F.
  2. Make the aioli - mix all the ingredients well and set aside for dipping.
  3. Mix flour and 1 tsp Dan-O’s Cajun Seasoning in a shallow dish and set aside.
  4. Lightly beat eggs and the chopped parsley in a second shallow dish and set aside.
  5. Mix panko and 2 tsp Dan-O’s Cajun Seasoning in a third shallow dish and set aside.
  6. Pat the fish dry with a paper towel, season with the juice of ¼ lemon and a sprinkle of Dan-O’s Cajun Seasoning.
  7. Dredge the fish pieces one at a time in the flour mixture, and shake off the excess. Dip in the egg mixture, letting the excess drip off. Then dredge in the panko breadcrumbs, and set it on a clean plate.
  8. Spray your air fryer basket with oil, then place the coated fish in the air fryer basket. Cook at 400ºF for 5 minutes on each side or until the fish flakes easily and reaches 145°F. Making sure they don’t burn, take them out when browning.
  9. Serve with that Dan-O’s Cajun Aioli. Yum Yum Get Ya Sum!®
