Ingredients

For the Chicken Marinade

  • 3-4 tbsp Dan-O’s Chili Lime Seasoning
  • 3 lbs boneless skinless chicken thighs, diced

For the Fried Rice

  • 6 cups cooked rice (preferably a day old)
  • ½ red onion, diced
  • 4 ears of corn, fresh, cut off the cob
  • 1 red bell pepper, diced
  • 1 jalapeño, diced (optional, adjust to spice preference)
  • 1 bunch green onions, chopped
  • ½ bushel cilantro, chopped
  • 6 eggs
  • 1 mango, diced
  • 1 stick of butter
  • Avocado oil (for cooking)
  • Juice of 2 limes
  • Additional Dan-O’s Chili Lime Seasoning (to taste)

Preparation Instructions

  1. Marinate the Chicken: In a bag, combine the diced chicken thighs with chili lime seasoning. Seal and refrigerate for 24 hours.
  2. Dice the red onion, red bell pepper, jalapeño, and mango. Cut the corn off the cob and chop the green onions and cilantro.
  3. Cook the rice: Preheat a flat top grill or large skillet over medium-high heat. Add a generous drizzle of avocado oil to the surface. Add the cooked rice to the grill and spread it out evenly.
  4. Push the rice to one side of the grill and add a little more oil if necessary. Crack the eggs onto the grill, scramble until cooked, and then mix them into the rice.
  5. Add the marinated chicken to the grill. Cook until the chicken is fully cooked and no longer pink, stirring occasionally.
  6. Create a space on the grill for the corn, jalapeños, red bell pepper, and diced onion. Add the remaining butter (about ⅔ of the stick) to this area and let the vegetables cook until tender.
  7. Once the chicken and vegetables are cooked, mix everything together on the grill. Add more chili lime seasoning and the juice of 2 limes for flavor.
  8. Fold in the diced mango, chopped cilantro, and green onions. Stir well to combine all flavors.
  9. Once everything is well mixed and heated through, plate the fried rice. Top with additional green onions and cilantro for garnish.
