First things first: choose the right onion. Look for one that feels heavy and has smooth, dry skin. Once you have your onion, the way you cut it is crucial for this recipe. Start by laying the onion on its side. Using a sharp knife, cut off the bottom and then the top. Peel away the outer layer, being careful to maintain the onion’s shape. The curvature of the onion is important for keeping it intact while cooking. When it comes time to flip the onion, use a spatula instead of tongs to ensure it stays together.

Ingredients

  • Dan-O's Chipotle Seasoning
  • 3 Sweet Vidalia onions, peeled
  • Olive oil for cooking
  • 2 to 3 cups of water

Preparation Instructions

  1. Begin by peeling the Sweet Vidalia onions.
  2. Once peeled, sprinkle a generous amount of Dan-O's Chipotle Seasoning on the top side of each onion.
  3. Place a skillet over medium to high heat. Allow the pan to heat up for a couple of minutes.
  4. Once the pan is hot, add a drizzle of olive oil, enough to coat the bottom of the skillet.
  5. Place the onions in the skillet with the seasoned side facing down. Season the top side of the onions with more Dan-O's Chipotle Seasoning.
  6. Cover the skillet and let the onions cook for 8 minutes. This will help them caramelize beautifully.
  7. After 8 minutes, carefully flip the onions and cook for another 8 minutes, covered.
  8. Flip the onions again and add ½ cup of water to the skillet. Cover and let them simmer for another 10 minutes.
  9. Repeat the flipping and adding ½ cup of water, simmering for an additional 10 minutes. Repeat this flipping and simmering process one to two more times. By the end of this stage, you should notice the center of the onions starting to pop up.
  10. Flip the onions one last time and allow them to cook for an extra 5 minutes, uncovered.
  11. Check for Doneness: When the center of the onions pops up, they are close to being done. The caramelization should be rich and flavorful.
