Creamy Baked Mashed Potatoes with Cheese Sauce are the ultimate comfort food! Inspired by my buddy Sonny Hurrell, who you can find on TikTok and Facebook (@thatdudecancook), I decided to change up how I typically do mashed potatoes. Baking the potatoes instead of boiling them retains more nutrients and enhances their natural flavors, especially when using Russet potatoes. Topped with a creamy cheese sauce made from fresh grated Parmesan and Dan-O’s Cheesoning, these Creamy Baked Mashed Potatoes make a perfect side dish for any occasion.
Ingredients
For the Mashed Potatoes
7-8 russet potatoes (about 4 pounds)
1 stick of butter (½ cup)
1/2 cup Heavy cream
For the Cheese Sauce
2 tbsp Dan-O’s Cheesoning
¼ cup all-purpose flour
2 tablespoons butter
3 cups whole milk
3-4 ounces fresh grated Parmesan cheese
Preparation Instructions
Preheat your oven to 400°F.
Place the russet potatoes on a baking sheet and bake for about 1 hour, or until they are tender. Once baked, let them cool slightly.
Slice the baked potatoes down the middle and scoop out the insides into a bowl, discarding the skins.
Using a potato ricer or a masher, mash the potato flesh until smooth.
Mix in the butter and add heavy cream, blending until it becomes creamy.
In a saucepan, melt the 2 tablespoons of butter over medium heat.
Stir in the flour and cook for 1-2 minutes, stirring constantly to create a roux.
Gradually whisk in the 3 cups of whole milk, continuing to stir until the mixture is smooth and creamy.
Add the fresh grated Parmesan cheese and Dan-O’s Cheesoning, stirring until melted and well combined.
Spread the mashed potatoes evenly in a large 12-inch pan.
Pour the cheese sauce over the top of the mashed potatoes.
Bake in the preheated oven at 350°F for about 20 minutes, or until the cheese sauce is bubbly and golden.
Remove from the oven and let it cool slightly before serving.
