- 1 lb cubed chicken breast
- 1 tbsp cooking oil
- 1 small can of baby corn, drained
- 1 small can of sliced water chestnuts, drained
- 1 small can of sliced bamboo shoots, drained
- 2 tsp minced garlic
- 1 - 2 tsp red curry paste (optional for adding spiciness)
- 1 can of coconut milk, shaken before opening
- 1/4 cup thinly sliced scallions, plus more for garnish
- 2 tbsp chopped fresh parsley, plus more for garnish
- cooked jasmine rice, for serving
Preparation Instructions
- Grab the chicken cubes and sprinkle generously with Dan-O's Cajun Seasoning.
- Heat oil in a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until it's no longer pink on the outside but not fully cooked through, about 2 minutes. We're just getting things started here.
- Next, add the garlic and vegetables. Hit everything with another shake of Dan-O's Cajun Seasoning and stir it all together.
- Pour in the coconut milk, add as much red curry paste as your spice-loving heart desires, and toss in 2 more tablespoons of Dan-O's Cajun Seasoning. Stir everything together until it's rich, creamy, and packed with bold flavor.
- Reduce the heat to medium-low and let it simmer for about 10 minutes, stirring occasionally. This gives the chicken time to finish cooking and lets all those flavors come together.
- Stir in a handful of scallions and parsley, then cook for another few minutes to brighten everything up.
