Chicken Salad with Homemade Lemon Pepper Vinaigrette

If you think salad dressing has to come out of a bottle loaded with junk, you’re doing it the hard way. This lemon pepper vinaigrette is the real deal, packed with fresh Dan-O’s flavor from Dan-O’s Lemon Pepper Seasoning, whole grain stone-ground mustard, olive oil, a little honey, balsamic vinegar, apple cider vinegar, and lemon juice. One of the best little hacks here is to taste as you go. And don’t miss this move: toss the lettuce with the vinaigrette first, then add the cheese and croutons after so they stay crisp. Top it off with juicy lemon pepper chicken, and that right there is a symphony of flavor.

Ingredients

  • 3 tbsp Dan-O’s Lemon Pepper Seasoning, divided
  • 1 Caesar salad kit lettuce base
  • 2 Chicken breasts
  • 2 tbsp high-heat olive oil
  • 1 ½ tbsp whole grain stone-ground mustard
  • 3 tbsp extra virgin olive oil
  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 tbsp apple cider vinegar
  • 1 tbsp lemon juice

Preparation Instructions

  1. Prep the Chicken: Season one side of the chicken with 1 tbsp of Dan-O’s Lemon Pepper Seasoning. Pat the seasoning into the chicken.
  2. Cook the Chicken: Preheat a pan over medium-high heat. Add the high-heat olive oil, lightly coating the bottom of the pan. Place the chicken in the pan seasoned side down. Sprinkle generously the unseasoned side with 1 tablespoon of Dan-O’s Lemon Pepper Seasoning. Reduce the heat to medium and cook for about 15 minutes, flipping occasionally, until the chicken is nicely crusted on the outside. Cook uncovered until the chicken reaches an internal temperature of 165°F.
  3. Make the Lemon Pepper Vinaigrette: In a bowl, whisk together 1 tablespoon Dan-O’s Lemon Pepper Seasoning, whole grain stone-ground mustard, olive oil, honey, balsamic vinegar, apple cider vinegar, and lemon juice until combined.
  4. Rest and Slice the Chicken: Remove the chicken from the pan and let it rest for 10 minutes. Slice the chicken against the grain.
  5. Dress the Salad: Remove the lettuce from the Caesar salad kit and set aside. Discard the packet inside the salad kit.
    Place the lettuce into a bowl. Pour ½ of the vinaigrette over the lettuce, reserving a little for later. Toss the lettuce to coat it evenly. Add the cheese and croutons from the salad kit.
  6. Assemble the Salad: Transfer the dressed salad to a serving plate or bowl. Top with the sliced lemon pepper chicken. Finish with one more drizzle of the reserved vinaigrette and Yum Yum Get Ya Sum!
