Tuscan Chicken sounds like something you’d order at a pricey restaurant, but guess what? You can whip it up at home without breaking a sweat — or the bank. Creamy sauce, sun-dried tomatoes, garlic, spinach, and tender chicken come together like a food love story that’ll make your taste buds swoon. It’s rich, it’s hearty, and it’s way easier to make than it looks. Hit it with some Dan-O’s Italian-O Seasoning to give it that authentic, I’ve-been-to-Tuscany-and-back flavor. Just don’t tell your dinner guests how simple it was — let them think you’re a culinary genius. We won’t spill the beans (or the sauce).

Serve this up with some Roasted Garlic Bread for a meal that satisfies so many cravings.

Ingredients

  • 2 tbsp Dan-O's Italian-O Seasoning
  • 3 chicken breasts cut into 1-inch chunks
  • 3 tbsp olive oil
  • 1 medium shallot, minced
  • 1/3 cup sun-dried tomatoes (drained and patted dry if oil-packed)
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 cup heavy cream or half-and-half
  • 1/2 cup finely grated Parmesan cheese
  • 5 cups fresh baby spinach

Preparation Instructions

  1. Heat 2 tbsp oil in a large skillet on medium-high heat.
  2. Add the chicken and sprinkle generously with Dan-O's Italian-O Seasoning, stir to mix well. Cook, stirring occasionally for about 3-5 minutes and remove from skillet.
  3. Reduce heat to medium and add 1 tbsp oil to skillet. Add the shallot and cook about 1 minute until lightly browned. Add the sun-dried tomatoes, garlic, and cook about 1 minute.
  4. Mix in the white wine and scrape the bottom of the skillet with a wooden utensil to get all that yummy goodness mixed in. Simmer until the wine has reduced by half.
  5. Stir in the heavy cream and parmesan cheese then add the spinach a handful at a time, stirring and cooking until all leaves are wilted in the sauce.
  6. Put the chicken back in the skillet, stir it all up and simmer for about 5 minutes to warm up the chicken and thicken the sauce.
  7. Serve over your favorite pasta!
