Slow Cooker Creamed Corn

Mmmmm, there’s nothing quite like a warm, creamy side dish of creamed corn to complement a holiday meal. It’s the perfect comfort food that adds a touch of sweetness and richness to your festive spread. With this easy creamed corn recipe, you can save time and effort by letting it cook in the crockpot while you focus on other holiday preparations. I used my trusty mini crockpot, which simplifies the process even more. It only has one setting—ON—which is roughly equivalent to the LOW setting on a standard crockpot. This hands-off cooking method ensures your creamed corn turns out deliciously tender and flavorful, without any need for constant attention. Whether you’re hosting a big family gathering or keeping it small and cozy, this crockpot creamed corn is sure to be a hit at the table!

Ingredients

  • 2.5 tbsp Dan-O's Jalapeño Cheesoning® Seasoning
  • 2 cans of corn kernels
  • 1/4 onion, diced
  • 1/2 red bell pepper, diced
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup 1/2 & 1/2
  • 1/4 tsp salt
  • 1/8 tsp sugar

Preparation Instructions

  1. In your crockpot add everything but the flour, we'll use this later.
  2. Stir it all up and let it cook, stirring occasionally for 2 hours.
  3. In a blender or food processor, add almost half the corn mixture and the flour. Blend a bit, but leave it chunky.
  4. Stir the blended mix back into the crockpot and heat another 30 mins.
  5. Serve and sprinkle with some Dan-O's Chipotle if you desire a little extra smoky kick!
