This easy recipe only requires 3 simple ingredients and if you have already pre-baked the potato, it will take less than 10 minutes to make.
One Pro-tip about making this recipe is to take a bit of a shortcut when baking the potatoes prior to putting them in the skillet. Instead of waiting a whole hour for the potatoes to cook in the oven, you can make them in the microwave in just 10 minutes instead. All you have to do is poke some holes in the potatoes on either side, then cook the potato for 5 minutes, then flip it over and put it in for 5 minutes more.
I make this recipe regularly. I microwave my potatoes for 4 minutes until they are pair cooked. I add onions, pepper, salt to the potatoes cooking on my cast iron pan that has bacon grease from my pre cooked bacon which I sprinkle over the potatoes as they are crisping on the mid range flip of the browning stage. I also add cheese to taste on the final flip.
Option: cook eggs to medium yolk and place on top of the potatoes when plating.
