Ingredients

  • 1-3 tbsp Dan-O's Cheesoning® Seasoning
  • 2 lbs russet potatoes
  • 4 cloves of garlic
  • 2 tbsp chives
  • 1-2 tbsp olive oil

Preparation Instructions

  1. Preheat the oven to 400°F.
  2. Peel and cut the russet potatoes into chunks. Place them in a pot of salted water and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.
  3. While the potatoes are cooking, finely chop the garlic and chives.
  4. Drain the potatoes and return them to the pot. Mash the potatoes until smooth and creamy. Add the chopped garlic, chives, Dan-O's Cheesoning® to taste. Mix well and let cool a bit.
  5. Form the mashed potato mixture into small pillow-shaped patties.
  6. Heat olive oil in a large skillet over medium heat. Fry the potato pillows until golden brown and crispy on both sides, about 3-4 minutes per side.
  7. Transfer the fried potato pillows to a baking sheet and bake in the preheated oven for 10 minutes to ensure they are heated through and crispy.
  8. Serve hot with your favorite dipping sauce!
