This Plantains with Pineapple Salsa recipe is one of my favorites! When you’re grocery shopping for this recipe, be sure to pick up very green, unripe plantains. The greener they are, the better! Ripe plantains will turn too soft when baked, so that firm texture is key for getting the perfect bite. Plus, green plantains have a subtle starchy flavor that contrasts beautifully with the tangy and sweet pineapple salsa.

Ingredients

  • 2 tbsp Dan-O’s Chipotle (divided)
  • 2 green plantains
  • 1/2 pineapple, diced
  • 3 limes (juiced)
  • 1/4 bushel of cilantro, chopped
  • 1 jalapeño, diced
  • 1/4 cup olive oil

Preparation Instructions

  1. Preheat your oven to 400°F.
  2. Make a slit down the length of each plantain's skin, then peel off the skin like a banana.
  3. Slice the peeled plantains into 1-inch portions.
  4. Place the cut plantains on a baking sheet. Drizzle 1 tablespoon of olive oil over them, ensuring they are well-coated.
  5. Bake the plantains in the preheated oven for 10 minutes.
  6. Remove the plantains from the oven. Using a sturdy plastic cup with a flat bottom, smash each plantain gently.
  7. In a separate bowl, mix remaining olive oil and the Dan-O’s Chipotle. Coat each smashed plantain in the mixture.
  8. Return the coated plantains to the oven and bake for an additional 10–15 minutes, or until golden brown and crispy.
  9. Remove the plantains from the oven and let them sit for 5-10 minutes to crisp up.
  10. Making the Pineapple Salsa: While the plantains are baking, prepare the salsa by placing the diced pineapple in a bowl.
    Add the lime juice into the bowl with the pineapple. Stir in the diced jalapeño and chopped cilantro to the pineapple mixture.
  11. Gently mix all the ingredients together and add 1 tbsp Dan-O’s Chipotle.
  12. Set the salsa aside to let the flavors meld.
