This Mini Cheesy meatloaf recipe is a delightful twist on the classic meatloaf, crafted into individual portions perfect for quick and easy dinners. Instead of a single large loaf, mini meatloaves are typically made using a muffin tin or shaped into smaller, individual servings on a baking sheet. This approach allows for faster cooking times and results in a higher surface area, so each mini meatloaf has more of that delicious crust on the outside. Perfectly portioned and freezer-friendly, these mini cheesy meatloaves are a hit with kids and make great leftovers for busy weeknights.

Serve em up with some Crispy Roasted Potatoes or some Smoked Mac and Cheese for the ultimate comfort food meal.

Ingredients

  • 3 tbsp Dan-O's Original or Spicy Seasoning
  • 1 lb ground beef
  • 1 onion, diced
  • 1 tbsp butter
  • 1 egg, whisked
  • 1 tbsp Worcestershire sauce
  • 1/4 cup + 2 tbsp BBQ sauce, divided
  • 1/4 cup panko-style bread crumbs
  • 3 oz cheddar cheese, cut into 1/4″ cubes

Preparation Instructions

  1. Preheat oven to 425 degrees.
  2. Melt butter in a skillet or pot over medium heat then add diced onions and a dash of salt.
  3. Cook, about 20 minutes - stirring every couple of minutes, until onions are golden brown and caramelized. Turn the heat down if they start to burn. Set aside.
  4. In a bowl mix the ground beef, egg, Worcestershire sauce, 2 Tablespoons BBQ sauce, bread crumbs, Dan-O's Seasoning, cheese cubes, and caramelized onions.
  5. Make mini sized loaves and place on a foil-lined, non-stick-sprayed baking sheet.
  6. Spread 1 tbsp BBQ sauce over each loaf then bake for 20 minutes, or until no longer pink in the center
  7. Top with more cheese and BBQ sauce and then serve.
