The Kentucky Hot Brown is a cherished classic from Louisville, Kentucky, and it’s a staple during the Kentucky Derby. This Dantastic version is an open-faced sandwich piled high with turkey, sweet crispy bacon, and a zesty Chipotle kick, all generously covered in a creamy Mornay sauce and baked to a beautiful golden brown. The Dan-O’s Chipotle seasoning gives it that smoky flavor that perfectly ties everything together.

Ingredients

  • 2 tbsp Dan-O's Chipotle Seasoning
  • 8 slices thick-cut applewood smoked bacon
  • 4 slices of buttered bread (Texas toast or similar)
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 1 cup milk
  • 3/4 cup grated Parmesan cheese
  • 2 tbsp chipotle sauce
  • 1 cup sliced turkey (preferably carved turkey)
  • 1 cup sliced Roma tomatoes
  • Brown sugar (to taste, for sprinkling)

Preparation Instructions

  1. Prepare the Bacon: Preheat your oven to 450°F. Place the thick-cut applewood-smoked bacon on a sheet tray with a baking rack. Bake for about 5 minutes, until the bacon begins to caramelize. Remove the bacon from the oven. Sprinkle bacon with brown sugar and then sprinkle with Dan-O’s Chipotle.
  2. Toast the Bread: On the same baking rack, add the buttered bread and place it back in the oven with the bacon. Toast for 3 minutes until golden brown.
  3. Make the Mornay Sauce: In a saucepan, melt the butter over medium heat. Whisk in 4 tablespoons of flour to create a roux, cooking for about 1 minute. Gradually add 1 cup of milk, whisking continuously until the mixture thickens.
  4. Stir in 3/4 cup of grated Parmesan cheese, 2 tbsp of chipotle sauce, and 2 tbsp of Dan-O's Chipotle seasoning. Mix well until smooth.
  5. Assemble the Hot Brown: Once the bacon and bread are done, start plating by laying the toasted bread on a serving platter. Layer on the carved turkey slices, followed by the Roma tomato slices. Drizzle the Chipotle Mornay sauce generously over the turkey and tomatoes. Top with the candied bacon and sprinkle additional Parmesan cheese for garnish.
  6. Serve immediately while hot.
