Ingredients

  • 2 tsp Dan-O's Chipotle Seasoning
  • 2 tbsp Dan-O's Original Seasoning
  • 4 slices bacon, chopped
  • 1 lb smoked sausage, sliced
  • 1 lb ground beef
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes, with juices
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 3 cups beef broth
  • 2 large potatoes, peeled and cubed (about 1/2 inch)
  • 1 tsp salt
  • About 2 tbsp chopped fresh parsley

Preparation Instructions

  1. Cook bacon until crispy in a large pot then transfer bacon to a plate lined with a paper towel to drain, leaving bacon grease in pot.
  2. Add the sausage to the pot and brown on both sides. Remove and add to the plate with the bacon.
  3. Add ground beef, onion, and garlic to the pot and brown the beef, about 5-7 mins. Sprinkle salt and Dan-O's Seasonings over the beef mixture, stir and cook for 1 minute.
  4. Add the diced tomatoes, beans, corn, potatoes, bacon, sausage, and broth. Simmer on low, covered, for 30 minutes, stirring occasionally.
  5. Garnish with parsley.
