Ingredients

  • 2 small pinches Dan-O’s SPG Tri-O (Salt, Pepper, Garlic) Seasoning
  • 2 large eggs - yolk and whites separated
  • 1/4 cup grated cheese, such as Gruyere, Swiss, or Parmesan
  • 1-2 ham steaks, trimmed to fit an English muffin
  • 2 English muffins

Hollandaise sauce:

  • 1/4 tsp of Dan-O’s Chipotle Seasoning
  • 3 egg yolks
  • 1 tbsp lemon juice, or more as desired for flavor
  • 1 tsp Dijon mustard
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter

Preparation Instructions

  1. Preheat that oven to 450°F and line a baking sheet with parchment paper.
  2. Separate your eggs, keeping those yolks clean and whole. Pro tip: keep each yolk in its own bowl, so you’re not playin’ egg roulette later.
  3. Now grab a clean mixing bowl—like really clean, no grease—and toss in your egg whites. Add a small pinch of Dan-O’s SPG Tri-O for each one and whip ‘em up. Start slow, then crank it up until you’ve got stiff peaks—we’re talkin’ cloud status.
  4. Gently fold in your grated cheese, nice and easy—don’t knock the air out of those fluffy whites!
  5. Scoop that mixture onto your baking sheet into two mounds. Shape ‘em into little nests with a dip in the middle for that yolk to sit pretty.
  6. Bake for 3 minutes, then pull ‘em out, drop a yolk right into each nest, and send ‘em back in for another 3 minutes.
  7. While that’s goin’, heat up your ham steaks and toast those English muffins till golden.
  8. Now let’s make that next-level hollandaise. Melt your butter, then toss egg yolks, lemon juice, Dijon, salt, and Dan-O’s Chipotle Seasoning into a blender. Blend for a few seconds, then slowly stream in that hot butter while blending until it’s smooth and creamy.
  9. Time to stack it up: Toasted English muffin → ham → cloud egg → drizzle that hollandaise → sprinkle of Dan-O’s SPG Tri-O.
