Ingredients

  • Dan-O’s Original Seasoning
  • 1 tbsp Dan-O’s Chipotle Seasoning
  • 1 pound of organic chicken pieces (can be a combination or choice of breast, thigh, leg, wing)
  • Corn or peanut oil for frying
  • 1.5 cups all-purpose flour
  • 1 cup cornstarch
  • 1 cup buttermilk

Cornbread Waffles:

  • 2 tbsp Dan-O’s Outlaw Butter Dust
  • 1 cup cornmeal
  • 2/3 cup all-purpose flour
  • 1/3 cup cornstarch
  • 1 1/2 tbsp baking powder
  • 2 tsp sugar
  • 1 tsp kosher salt
  • 1 2/3 cups whole milk
  • 2 large eggs
  • 1 cup maple syrup

Preparation Instructions

  1. Fry the Chicken: Pat the chicken dry and set it on a sheet pan.
  2. In a large high-sided skillet or cast-iron pan, heat 2–3 inches of oil to 375°F.
  3. Season the chicken with Dan-O’s Original Seasoning.
  4. In one shallow dish, combine flour, cornstarch, and 2-3 tbsp of Dan-O’s Original Seasoning. Pour buttermilk into a second dish.
  5. Dredge the chicken in the flour mixture, then buttermilk, then back into the flour mixture
  6. Carefully place the chicken into the hot oil in batches. Fry until golden brown, crispy, and cooked through to 165°F internal temperature, about 5–10 minutes depending on size. Transfer to a wire rack between batches.
  7. Make the Cornbread Waffles: Preheat your waffle maker and get ready for some crispy golden goodness.
  8. In a medium bowl, whisk together the cornmeal, flour, cornstarch, baking powder, sugar, salt, and the Dan-O’s Outlaw Butter Dust. Add the milk and eggs, then mix until just combined.
  9. Grease the waffle maker with butter or cooking spray and pour in the batter. Cook until golden brown and crispy around the edges. Repeat with the remaining batter.
  10. Make the Maple Chipotle Syrup: In a small saucepan, combine maple syrup and chipotle over medium heat. Bring to a light simmer and stir until smooth and slightly thickened.
