Ingredients
For the Pizza Base:
- 1 Tbsp Dan-O’s Tac-O™ seasoning
- 2 large flour tortillas
- 1 can (15 oz) black beans (drained)
- 1/4 cup water
- Taco sauce (to taste)
Toppings:
- 1/4 cup sliced black olives
- 1/2 cup diced tomatoes (fresh or canned)
- 1-2 jalapeños, sliced (optional, for heat)
- 1 cup shredded Mexican cheese blend
Preparation Instructions
- Preheat your oven to 425°F.
- Place the two large flour tortillas directly on the oven rack or on a baking sheet and bake for about 5 minutes, or until they are crispy.
- Add the drained black beans to a bowl with Dan-O’s Tac-O™ and water.
- Use a potato masher to mix this all together and create a black bean paste.
- Take one of the baked tortillas and spread the bean mixture evenly to create a base.
- Place the second baked tortilla on top of the bean mixture and evenly spread taco sauce over the top tortilla.
- Sprinkle the shredded Mexican cheese blend over the taco sauce, followed by a generous sprinkle of Dan-O’s Tac-O™.
- Arrange the diced tomatoes, sliced black olives, and jalapeños (if using) evenly on top.
- Place the assembled Mexican pizza in the preheated oven and bake for about 5 minutes, or until the cheese is melted and bubbly, and the edges of the tortillas are golden.
