Chili Lime Bloody Mary Chicken, Vegetables and Rice

What makes this Chili Lime Bloody Mary Chicken, Vegetables and Rice so interesting is that the flavor combo sounds a little wild at first: margarita mix + Bloody Mary mix + Dan-O’s Outlaws Blackened Bloody Mary + Dan-O’s Chili Lime Seasoning. But once the chicken marinates, all those bold flavors come together in the best way. Then you serve it over buttery yellow rice (thanks to Dan-O’s Outlaws Butter Dust) with roasted broccoli, sweet peppers, and snap peas, and it’s game over. It’s one of those big-flavor, simple-step meals that looks impressive but is easy to pull off.

Ingredients

  • 2 tbsp Dan-O’s Chili Lime Seasoning (divided)
  • 2 tbsp Dan-O’s Butter Dust (divided)
  • Dan-O’s Outlaw Blackened Bloody Mary
  • Chicken (breasts, pounded out)
  • 1 ½ cups Margarita mix (non-alcoholic)
  • 1 ½ cups Bloody Mary mix
  • 1 cup rice
  • 2 cups water
  • 1 container snap peas
  • 2 heads broccoli
  • 1 bag sweet peppers
  • 1 tbsp Oil (for drizzling)

Preparation Instructions

  1. Prep and marinate the chicken: Place saran wrap over the chicken and pound it out. Add the chicken to a large zip-top bag. Season the chicken in the bag with 1 tbsp Dan-O’s Outlaw Blackened Bloody Mary and 1 tbsp Dan-O’s Chili Lime. Pour in non-alcoholic margarita mix and original Bloody Mary mix. Zip the bag and mix everything around well. Let the air out, zip it again, and marinate in the fridge for 2 to 4 hours.
  2. Start the rice: In a pan, add rice and water. Add Butter Dust. Bring to a boil. Reduce to a simmer, cover, and cook for 20 minutes.
  3. Prep the vegetables: Add the snap peas to a baking tray. Cut the broccoli florets off the stems and add them to the tray. Cut the tops off the sweet peppers, then cut them in half and add to the tray. Spread everything evenly across the tray.
  4. Season the tray and add the chicken: Season the vegetables with the remaining Dan-O’s Chili Lime and Dan-O’s Blackened Bloody Mary. Drizzle a little oil over the vegetables. Remove the chicken from the marinade bag and place it on the tray. Spoon a little of the marinade juice over the tray/chicken.
  5. Bake in a 400°F oven for 30 minutes.
  6. Plate and Serve: Spoon the Butter Dust rice onto a plate, top with the chicken and roasted veggies, then drizzle a little pan juice over everything. Yum Yum Get Ya Sum!
