Roasted Tomato and Dill Soup

If you’ve never made homemade soup from scratch, don’t worry! This easy-to-follow recipe is perfect for beginners and experienced cooks alike. Roasted tomato soup is not just a comfort dish; it’s a wholesome meal that combines the rich flavors of ripe tomatoes, fragrant herbs, and a touch of creaminess for a satisfying texture. Ingredients

  • 1 packet Dan-O’s Dips Dill
  • 3 pounds Roma (plum) tomatoes, quartered
  • 1 yellow onion, cut into wedges about an inch thick on the outside edge
  • 2 red bell peppers, seeded and quartered
  • 3 tbsp olive oil
  • 6 garlic cloves, unpeeled
  • 5 cups vegetable broth
  • 3/4 cup heavy cream
  • salt and pepper
  • Fresh dill to top

Preparation Instructions

  1. First things first, fire up that oven to 400°F. Grab two big baking sheets and line ’em with aluminum foil — easy cleanup is always a win.
  2. Now take your tomatoes and red peppers, toss ’em gently with a little olive oil, then hit ’em with a pinch of salt and pepper. Do the same thing with those onion wedges, just try to keep ’em together so they don’t fall apart on you.
  3. Spread the tomatoes out on one baking sheet skin-side down.
  4. On the second baking sheet, lay out the peppers and onions, and toss the unpeeled garlic right on there with ’em. again keeping the pepper skin-side down.
  5. Slide both pans into the oven and let ’em roast for 35 to 45 minutes, until everything’s tender and those edges are lookin’ nice and golden.
  6. Once the veggies are done, grab a big soup pot and bring your vegetable broth to a boil over medium-high heat. Peel that roasted garlic, toss it in, then add all those Dantastic roasted veggies along with the packet of Dan-O’s Dips Dill. Give it a good stir and let it simmer for about 15 minutes, just enough to bring everything together.
  7. Now it’s time to blend. Use an immersion blender right in the pot, or carefully transfer the soup to a blender in batches. Once it’s smooth and back in the pot, pour in that heavy cream, stir it up, and gently reheat.
