Tac-O Rice

Let me introduce you to Tac-O Rice, a dish that’s as Dantastic as it is simple. So, when someone sent me this viral TikTok video, I just knew I had to make a Dan-version of it, especially because it was practically begging for our Dan-O’s Tac-O Seasoning.

Tac-O Rice is also the perfect dish to prep ahead of time if you know you’ve got a busy week coming up. Whether you’re hauling kids from one practice to the next or juggling back-to-back business meetings, you can easily portion it out after cooking, then freeze and reheat. This method is ideal for those hectic evenings and ensures that your Tac-O Rice stays just as delicious as the day you made it.

Ingredients

  • 2 tablespoons Dan-O’s Tac-O
  • 1 tablespoon Dan-O’s Chipotle
  • 1 pound of ground beef, chicken, or turkey
  • 1 cup Jasmine Rice
  • 2 cups beef broth
  • 1 (16 oz) jar of salsa
  • 1 (16 oz) queso cheese dip
  • 1 cup queso quesadilla shredded cheese
  • 2 jalapeños, sliced
  • 1 yellow onion, chopped
  • ¼ cup chopped green onion
  • Fresh cilantro, for garnish
  • Tortilla chips or tortillas for serving
  • Optional toppings: sour cream, lettuce, tomatoes

Preparation Instructions

  1. Preheat your oven to 400°F
  2. Brown your meat in a skillet over medium heat. Once it’s cooked through, drain the excess grease.
  3. Add ½ cup of water and 1 tablespoon Dan-O’s Tac-O to the skillet. Stir it all together until the meat is nicely coated, then take it off the heat.
  4. In a 9x13 inch casserole dish, combine the cooked meat, Jasmine rice, beef broth, mild salsa, chopped onion, 1 tablespoon of Dan-O’s Tac-O and Dan-O’s Chipotle. Stir everything until well mixed, then spread it out evenly in the dish.
  5. Bake for 45 minutes. This will give the rice time to absorb all those Dan-Good flavors.
  6. After 45 minutes, take the dish out of the oven. Pour the queso cheese dip over the top, then sprinkle with shredded Queso Quesadilla cheese. Add your sliced jalapeños on top.
  7. Bake again - Put the dish back in the oven, uncovered, for another 15 minutes, or until the cheese is melted and bubbling.
  8. Serve your Tac-O Rice over crispy tortilla chips or wrap it up in a tortilla. Top it off with sour cream, lettuce, tomatoes, and a sprinkle of fresh cilantro for that extra touch
