Sweet Chipotle Pineapple Chicken

The sauce combines pineapple Jarritos, chipotle peppers in adobo, lime juice, cilantro, green onions, garlic, honey, and mango nectar, all blended together and seasoned with Dan-O’s Tac-O and Chipotle blends. This marinade infuses the chicken with bold and delightful flavors.

 

After a quick marination, the chicken is griddled until it has a beautiful crust and is cooked through. Perfect for tacos, rice bowls, or as a standalone entrée, this dish is sure to be a hit with family and friends.

Ingredients

  • 4.5 lbs chicken breast
  • 1 bottle Pineapple Jarritos
  • 2 cans chipotle peppers in adobo sauce
  • 1 lime
  • 1/4 bunch cilantro
  • 2 green onions
  • Dan-O's Tac-O seasoning
  • Dan-O's Chipotle seasoning
  • 1 can mango nectar
  • 1 tbsp honey
  • 1 whole head of garlic

Preparation Instructions

For the Sauce

Prepare Ingredients:

  • Add the juice from the pineapple Jarritos to a blender.
  • Add 2 cans of chipotle peppers in adobo sauce to the blender.
  • Squeeze the juice of 1 lime into the blender.
  • Add 1/4 bunch of cilantro to the blender.
  • Chop 2 green onions and add them to the blender.
  • Peel a whole head of garlic and add to the blender.
  • Add 1 tbsp of honey to the blender.
  • Pour 1 can of mango nectar into the blender.
  • Add a generous amount of Dan-O's Tac-O and Chipotle seasoning to the blender.

Blend:

  • Blend all ingredients until a smooth consistency is achieved.

For the Chicken

Prepare Chicken:

  • Cut chicken breasts into chunks.
  • Add sliced pineapple, chicken chunks, and the prepared sauce to a freezer bag.

Marinate:

  • Carefully mix the contents of the bag and let sit for a maximum of 1 hour.

Cook:

  • After 1 hour, drain the juice out of the bag.
  • Place the chicken chunks on a preheated griddle.
  • Cook on the griddle for about 15-20 minutes, moving the chicken around every 5 minutes to ensure even cooking.
  • Once the chicken chunks are cooked through and have a bit of a crust, remove them from the griddle.

Serve:

  • Serve the cooked chicken chunks hot, with your favorite sides, or in tacos.
