Grilled Cheese Burrito

Get ready to make these delicious Grilled Cheese Burritos! This delightful fusion combines the comforting essence of grilled cheese with the hearty filling of a burrito. When grilling the burritos, keep the heat low to ensure the cheese melts perfectly while achieving a golden, crispy exterior. Don’t forget to soak up any excess oils for that crunchy goodness!

Ingredients

  • 2 to 3 tbsp Dan-O’s Tac-O Seasoning
  • 1 tbsp Dan-O’s Chipotle Seasoning
  • 2 tbsp Dan-O’s Cheesoning® Seasoning
  • 1 pound boneless, skinless chicken thighs
  • 2 cups jasmine rice (uncooked)
  • 4 garlic cloves (made into paste)
  • 1 jalapeño, julienned
  • 1/2 cup corn
  • 1/2 onion, chopped
  • 1 red bell pepper, diced
  • 1 cup shredded mild cheddar cheese
  • 4 cups chicken stock
  • 1 tbsp olive oil or avocado oil (for cooking)
  • Large flour tortillas (for wrapping)

Preparation Instructions

  1. Season the chicken thighs generously with Dan-O’s Tac-O on both sides.
  2. Heat a skillet over medium-high heat and add olive oil or avocado oil. Add the seasoned chicken thighs and sear until browned on both sides (about 5-7 minutes).
  3. Deglaze the pan with 1/4 cup of chicken stock, scraping up any browned bits. Cover and cook until the chicken reaches an internal temperature of 165°F (about 5-10 minutes). Once cooked, cut the chicken into bite-sized pieces.
  4. In a separate large pan, heat oil and sauté the chopped onion, jalapeño, and bell pepper over medium heat until softened.
  5. Mince the garlic and then smash it into a paste. Add the garlic paste to the sautéed vegetables.
  6. Add the corn and cook for another 2-3 minutes. Sprinkle with Dan-O’s Chipotle.
  7. Stir in the uncooked rice and the remaining chicken stock. Cover and simmer until the rice is fully cooked, about 15 minutes.
  8. Assemble the Burritos: Lay a tortilla flat and spoon a portion of the rice and vegetable mixture onto the center. Top with the diced chicken and sprinkle generously with shredded cheese. Fold in the sides of the tortilla and roll it up tightly to enclose the filling.
  9. Grill the Burritos: Heat a nonstick pan over low heat. Sprinkle a layer of shredded cheese onto the pan in the shape and size of the burrito. Sprinkle generously with Dan-O’s Cheesoning® over the cheese and let it melt and bubble. Place the burritos seam-side down in the skillet and cook for about 2-3 minutes until the cheese forms a hard crust.
  10. Remove from the skillet and let cool slightly before serving.
