Ingredients

  • 2.5 lbs chuck roast
  • 1 bottle Modelo
  • 1 bottle Guava Jarrito
  • 0.5 bunch cilantro
  • 0.5 bunch green onion
  • 1 jalapeno
  • 2 tbsp tomato paste
  • 1 head garlic, deshelled
  • 1 bottle Dan-O's Tac-O
  • 1 heaping tbsp beef paste
  • Yellow rice (amount as per package instructions)

Preparation Instructions

Prepare the Chuck Roast:

  • Place the chuck roast into the Instant Pot.

Blend the Sauce:

  • In a blender, combine the Modelo, Guava Jarrito, half a bunch of cilantro, half a bunch of green onion, sliced jalapeno, tomato paste, deshelled garlic, half a bottle of Dan-O's Tac-O seasoning, and the beef paste.
  • Blend until smooth and juicy.

Cook the Roast:

  • Pour the blended mixture over the chuck roast in the Instant Pot.
  • Seal the Instant Pot and cook on high pressure for 2 hours.

Cook the Rice:

  • While the roast is cooking, prepare the yellow rice according to the package instructions.

Prepare the Rice Cakes:

  • Once the rice is cooked, drain any excess juice from the Instant Pot.
  • Form the cooked rice into a flat cake and cut into three strips.
  • Spray the bottom of the air fryer with oil to prevent sticking.
  • Place the rice strips into the air fryer and cook at 400°F for 10 minutes. Flip the strips and continue to air fry for an additional 4-5 minutes or until crispy.

Assemble the Dish:

  • Remove the rice cakes from the air fryer.
  • Spread the birria meat over the top of each rice cake.
  • Dress with chopped onion and cilantro.
  • Drizzle a little bit of the birria sauce over each rice cake.
