Ingredients

2 tbsp Dan-O’s Original Seasoning
1 tsp onion powder
1 large head of cauliflower, cut into florets
2 Tbsp olive oil, or butter
1/2 yellow onion, diced
2 stalks celery, diced
2 medium carrots, peeled and diced or 1 cup shredded carrot
2 tsp, minced garlic
4 cups vegetable broth
1/2 cup half and half
1 cup shredded white cheddar cheese
Croutons or crusty bread to serve (optional)

Preparation Instructions

Set a large pot or Dutch oven over medium-high heat and drizzle in some olive oil (or butter if you’re feelin’ fancy). Toss in the onion, carrots, and celery and sauté for about 4–5 minutes, stirring often, until everything softens up and smells amazing. Add the garlic and cook for another 30 seconds, just until fragrant.
Pour in the vegetable broth, add the cauliflower, and hit it with Dan-O’s Original. Give it a good stir, bring the soup up to a boil, then reduce the heat to medium-low. Let it simmer for 15–20 minutes, until the cauliflower is nice and tender.
Now it’s blending time. Use an immersion blender right in the pot, or carefully transfer the soup to a blender or food processor and blend until smooth and creamy. If you used a blender, pour the soup back into the pot, then stir in the half-and-half and shredded cheese until everything is melted and combined.
