Ingredients

For the Spring Rolls

  • 1 tbsp Dan-O’s Chili Lime Seasoning
  • 1 lb shrimp, peeled and deveined
  • 1 tbsp avocado oil (for binding)
  • 1 English cucumber, julienned
  • 1 large carrot, julienned
  • 1 red bell pepper, julienned
  • 2 jalapeños, julienned
  • 2 avocados, sliced
  • 2 green onions, julienned
  • Rice paper wrappers (spring roll wrappers)

For the Spicy Chipotle Dipping Sauce

  • 2 tbsp Dan-O’s Chipotle Seasoning
  • ½ can (about 3-4 peppers) chipotle peppers in adobo sauce
  • 2 garlic cloves, minced
  • ½ cup avocado oil
  • Juice of 1 lime
  • A pinch of salt (to taste)
  • ¼ cup sour cream

Preparation Instructions

  1. Prepare the Shrimp: Combine the shrimp with avocado oil and Dan-O’s Chili Lime in a bowl. Let it marinate for 5-10 minutes.
  2. Cook the Shrimp: Heat a skillet over high heat. Add the marinated shrimp and cook until they turn pink and opaque, about 6-8 minutes. Remove from heat and let cool.
  3. Prepare the Vegetables: Julienne the cucumber, carrot, red bell pepper, jalapeños, and green onions. Slice the avocados.
  4. Prepare the Dipping Sauce: In a blender, combine the chipotle peppers, minced garlic, avocado oil, Dan-O’s Chipotle, lime juice, and salt. Blend on high until smooth. Add the sour cream and blend again until well combined. Adjust seasoning if necessary.
  5. Assemble the Spring Rolls: Soak a rice paper wrapper in warm water for about 30 seconds or until it becomes pliable. Place the wrapper on a clean surface. Lay a few pieces of shrimp, cucumber, carrot, bell pepper, jalapeños, avocado, and green onions in the center of the wrapper. Fold the sides over the filling and then roll it tightly from the bottom to the top to enclose the filling.
  6. Repeat the process with the remaining ingredients. Serve the spring rolls with the spicy chipotle dipping sauce on the side.
