These are packed full of that signature Yum Yum Get Ya Sum you’ve come to expect from Dan-O’s and can be made in a large batch. This is the perfect recipe for meal prep or just a quick dinner. The best part is you can customize these to your liking! If you could add some onions, bell pepper, or jalapeno if you wanted. We used one of our value packets of Dan-O’s Original that you can find at Dollar General but if you have some Dan-O’s already or wanna use another flavor, then just pop pop like you would any other time!

What is the Difference between Budget Beef Burritos and Enchiladas?

The line between budget beef burrito and enchilada is a thin line. Most American burritos are a far cry from traditional Mexican ones. Mexican burrito is believed to have originated in the North of Mexico. It tends to use a flour tortilla but is limited when it comes to fillings. Traditional styles tend to have few fillings like beans and veggies but more American styles are stuffed to the brim with a variety. Meanwhile, Enchiladas have a long history evolving from the Aztecs original recipes into the modern one. The main difference between budget beef burritos and enchiladas is that enchiladas use corn tortillas and tend to be a mixture of rice, beans or protein, veggies, and sauce.

While budget beef burritos are covered in sauce, we wouldn’t classify them as enchiladas due to the use of a flour tortilla, the inclusion of rice and multiple fillings. We would have this filed under Mission style burrito. Mission style burritos are from the Mission District of San Francisco, and grew in popularity during the 60s. Now you know a useless amount about burritos and enchiladas!

Ingredients

  • Large tortillas
  • 1 lb ground beef
  • 15 oz can black beans
  • 15 oz can enchilada sauce
  • 8 oz shredded colby jack cheese
  • 9 oz bag of yellow rice
  • 1 tbsp cumin
  • 1 packet of Dan-O’s Original Seasoning (Available at a Dollar General near you)
  • Cilantro, topping

Preparation Instructions

  1. Brown ground beef and add Cumin, black beans, and Dan-O’s, stir together
  2. In a pot cook yellow rice per instruction
  3. Heat tortilla and add rice, ground beef/beans, and cheese
  4. Roll tortilla and place in a 9x13 baking dish and repeat for remaining tortillas
  5. Cover tortillas with enchilada sauce and more cheese
  6. Bake at 400 degrees for 30 minutes or until cheese is melted
  7. Plate the burrito and add crema, Dan-O’s Chipotle, and cilantro
  8. Enjoy!
