This Cozy Breakfast Hash recipe is perfect for a brunch and even better when paired with a Spicy Bloody Mary Cocktail!

Ingredients

  • 1 tbsp Dan-O’s Crunchy™ Seasoning
  • Handful of baby potatoes cut into small chunks
  • Handful of large brussels sprouts, trimmed and sliced
  • 1 tbsp grapeseed or avocado oil
  • 1/2 onion, diced
  • 2 garlic cloves, minced
  • chunks of cooked bacon
  • 2 eggs

Preparation Instructions

  1. Boil the potatoes for 15 minutes until they’re nice and tender.
  2. While the potatoes are cooking, heat oil in a big non-stick pan over medium heat. Toss in the onion and cook for about 8 minutes, stirring until it gets a little golden. Add the Dan-O’s Crunchy™ Seasoning and Brussels sprouts, mix it up then cover the pan and let them steam for 5 more minutes.
  3. Drain the potatoes and give them a light mash or keep em whole, whatever texture you prefer. Stir them into the veggies and cook for another 5-10 minutes, turning occasionally so everything gets a nice golden brown. Add your bacon bits with this step, if you got em!
  4. Poach your eggs to perfection—whether you like them runny or fully cooked. Use a slotted spoon to lift them out. Plate up the hash and top each serving with a poached egg. Enjoy!
