How to Make a Vegan Black Bean Quesadilla
A Rich and Flavorful Vegan Recipe
Good vegan recipes can be hard to come by. A lot of times they can be kind of bland and just leave you feeling like something was missing. This Black Bean Quesadilla is the perfect recipe for any vegan looking for a flavorful take on this Mexican cuisine classic.
Mouthwatering Combination
The key to this recipe is the combination of lime juice, jalapenos, salsa, and Dan-O’s together. All of those combined make a mouthwatering flavor.

Ingredients
1 Can (340g) Black beans, drained and rinsed
Vegetable or Canola Oil
½ lime, juiced
1/2 tsp pickled jalapenos juice
1/2 cup salsa
3 cups vegan cheddar cheese
3-4 large tortilla wraps
1/3 cup pickled jalapenos

Instructions
- In a pan over medium heat add a little bit of cooking oil. Add black beans and Dan-O’s seasoning. Mix well and cook 4-5 minutes as the beans soften, mash them slightly with a fork.
- Add lime juice, juice from jalapenos, and salsa- mix to combine. Cook 4-6 minutes, continuing to mash the beans as they cook. Remove from heat.
- To the tortilla, spread some black beans on half of it. Leave one half without beans- this will be the half you fold over.
- Top the beans with jalapenos and vegan shredded cheese. Fold over the empty half and press slightly.
- Add a little oil to a pan over medium heat. Once warmed, add filled tortilla and cook until golden brown on each side and cheese is melted- about 2-4 per side.
