These grilled cheese smash burgers offer up mouthwatering flavor in every bite with their crisp crusty, and juicy patties. This is the perfect comfort food, and after a hot day in the sun these really hit the spot especially with a cold beer or glass of sweet tea. The best part is that you can really play around with them by adding things like caramelized onions or different types of cheeses.

The science behind smash burgers

Beef has a few things going for it when it comes to the flavor department. First is the Maillard Reaction, which says that heat causes sugars and amino acids to react and form a caramelized rich crust. This is mostly universal across foods, it’s what gives a lot of foods’ their signature taste and why it makes your mouth water. There’s also fat, which is as straightforward as it sounds, fat makes things taste good. How this translates to smash burgers is that when you smash down your beef on a hot griddle, that fat has nowhere to go but back into the patty. This ensures your burger is cooked in all those mouthwatering juices.  The second part is that the Maillard reaction gives the patty a dark, crisp crust.

Ingredients

  • 1 lb ground beef (4 – ¼ lb balls)
  • 4 slices brioche bread
  • 6 slices of American Cheese
  • Mayonnaise
  • Dan-O’s Original

Instructions

  1. In a bowl, mix together ground beef and Dan-O’s Original
  2. Form into four ¼ lb balls
  3. Place beef balls on a hot griddle and smash with spatula
  4. Season burgers again with Dan-O’s Original
  5. Toast bread by adding mayo to one side and placing on griddle
  6. Flip the burgers and add cheese
  7. When cheese is melted add both burgers to toasted bread
  8. Plate and enjoy!
