Ingredients
- 1 packet Dan-O's Chili Seasoning Packet - Mild
- 1 packet Dan-O's Tac-O Seasoning Packet - Birria
- 1 lb 80/20 ground beef
- 1 lb cube steak, cut into small bite-sized pieces
- 1 lb Jimmy Dean Hot Breakfast Sausage
- 1 lb filet mignon, cut into bite-sized pieces
- 1 yellow onion, diced
- 1 (4 oz) can diced green chiles
- 2 (14.5 oz) cans diced tomatoes
- 1 (8 oz) can tomato sauce
- 4 cups unsalted beef stock
- 1 head garlic
- 1 tbsp Olive oil
Preparation Instructions
- Cook the Ground Beef: In a large Dutch oven or heavy-bottomed pot over medium-high heat, cook the ground beef until browned. Drain the grease, then return the beef to the pot.
- Cook the Sausage and Onion: Add the diced onion and Jimmy Dean Hot Breakfast Sausage to the pot. Break the sausage into crumbles as it cooks until it is fully browned and the onion has softened. Do not drain the grease from the breakfast sausage, as it adds extra flavor to the chili.
- Build the Chili: Add the Dan-O's Tac-O Seasoning Packet - Mild, Dan-O's Tac-O Seasoning Packet - Birria, and Dan-O's Chili Seasoning Packet - Mild. Stir until the meat is evenly coated with the seasonings. Add the diced green chiles, diced tomatoes, tomato sauce, cube steak, and beef stock. Stir everything together until well combined.
- Roast the Garlic: While the chili is cooking, cut the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap the garlic tightly in foil, and roast at 400°F for about 45 minutes until soft and caramelized.
- Simmer the Chili: Cover the pot with a lid and cook the chili over a medium-low simmer for about 45 minutes, allowing the cube steak to become tender and the flavors to develop.
- Finish with the Filet and Roasted Garlic: Remove the roasted garlic from the oven and squeeze the softened cloves into a small bowl. Mash the garlic into a paste, then stir it into the chili. Add the diced filet mignon and cook for about 2 minutes, just until the filet is cooked through but still tender.
