Ingredients

  • 1 Dan-O’s Tac-O Seasoning Packet - Mild
  • Dan-O’s SPG Tri-O (Salt, Pepper, Garlic) Seasoning
  • 1 cup Cotija cheese
  • 6 Eggs
  • 6 Guajillo chilis - rehydrated
  • 6 Tortillas
  • 16 oz Pico de gallo
  • 1 Avocado, sliced
  • ½ cup heavy cream
  • ¼ cup of milk

Preparation Instructions

  1. Bring a small pot of water to a boil and add the dried chiles. Let them simmer for 5 minutes until softened, then drain and set aside.
  2. While the chiles are cooking, whisk together the heavy cream and 1 tablespoon of Dan-O's Tac-O Seasoning Packet – Mild until smooth and drizzle-ready. Pop it in the fridge while you finish the rest of the burritos.
  3. Heat a skillet over medium heat and add the softened chiles and pico de gallo. Sprinkle with 1 teaspoon of Dan-O's SPG Tri-O and let everything simmer together for 5–10 minutes, stirring occasionally, while you prepare the eggs.
  4. In a bowl, whisk together the eggs, a splash of milk, and 2 tablespoons of Dan-O's Tac-O Seasoning Packet – Mild until well combined.
  5. Heat a separate skillet over medium-low heat and scramble the eggs until they're light, fluffy, and cooked just the way you like them.
  6. Warm your tortillas until they're soft and easy to roll. Layer the scrambled eggs down the center, then spoon on the chile and pico mixture. Sprinkle with crumbled cotija cheese.
  7. Top with sliced avocado, a generous drizzle of the creamy Tac-O sauce, and one more sprinkle of cotija cheese for good measure.
