Flavors Used:

Ingredients

  • Dan-O’s Tac-O Seasoning Packet - Spicy
  • 1 tsp Dan-O’s Dips Mexi-Ranch
  • 2-3 Chicken breasts or cutlets
  • 1 can Corn
  • 1 can Refried beans
  • Large Flour tortillas
  • 2 cups shredded cheese, Mexican mix and cheddar
  • 1 tbsp oil
  • Dipping sauces: Salsa, guacamole, or sour cream

Let’s Make It!

  1. Season the chicken generously with Dan-O’s Tac-O Seasoning Packet - Spicy and cook in a skillet over medium heat until browned and cooked through. Let it rest briefly, then chop or shred it into bite-sized pieces.
  2. Using a sharp knife or coffin-shaped cookie cutter, cut the flour tortillas into coffin shapes. Try to make matching pairs—you’ll need a top and bottom for each spooky little quesadilla.
  3. Add a few drops of green food coloring to the refried beans and stir until you’ve reached your desired creepy green color. Spread a thin layer of the green refried beans over half of the coffin-shaped tortillas.
  4. Melt a little butter or heat a small amount of oil in a skillet over medium-low heat. Place the bean-covered coffin tortillas in the skillet, bean-side up.
  5. Top each coffin with shredded cheese, corn, and the Spicy Tac-O chicken. Place a matching tortilla coffin on top and gently press everything together.
  6. Cook for 3–5 minutes, or until the bottom is golden and crisp. Carefully flip each quesadilla and continue cooking until the other side is toasted and the cheese inside is completely melted.
  7. For the creepy dipping sauce, stir together sour cream, Dan-O’s Dips Mexi-Ranch, and a few drops of green food coloring. Mix until smooth and ghoulishly green.
  8. Serve the Coffin Quesadillas warm with your creepy Mexi-Ranch dipping sauce. Yum Yum Get Ya Sum!®
