Ingredients

  • Dan-O’s Cajun seasoning
  • Dan-O’s Tac-O seasoning
  • 1 lb chicken tenderloins
  • 1–2 cups buttermilk (enough to cover them for marinade)
  • ⅛ cup jalapeño or pickle juice
  • 2 cups all-purpose flour (season with the same seasonings)
  • 2 cups of cooking oil (corn or peanut)

Hot Honey Sauce

  • ½ cup buffalo sauce
  • ¼ cup honey

Pasta

  • Dan-O’s Cajun seasoning
  • Dan-O’s Tac-O seasoning
  • 1 lb penne pasta
  • 2 tbsp unsalted butter
  • 2 tsp minced garlic
  • ½ yellow onion, finely chopped
  • 1 ½ cups heavy cream
  • ⅔ cup shredded mozzarella
  • ⅔ cup Grated Parmesan

Preparation Instructions

  1. Marinate the Chicken: Season the chicken tenderloins generously with Dan-O's Cajun Seasoning, then place them in a shallow bowl. Pour in enough buttermilk and jalapeño or pickle juice to fully coat the chicken. Let it marinate for 30 minutes to 1 hour for juicy, flavor-packed chicken.
  2. Fry Until Crispy: Coat each tenderloin in seasoned flour until well covered. Heat oil in a deep skillet over medium-high heat, then fry the chicken until it's golden brown, crispy, and cooked through. Transfer to a wire rack to cool while you prep the rest of the dish.
  3. Cook the Pasta: Cook your favorite pasta according to the package directions until al dente. Drain and set aside.
  4. Make the Hot Honey Sauce: In a small saucepan, melt 1 tablespoon butter, then stir in the buffalo sauce and honey. Simmer until smooth and glossy. Toss the crispy chicken in the sauce until every bite is coated in sweet heat.
