Roasted Tomato Ranch Pasta

Juicy blistered tomatoes, savory mushrooms, sweet roasted onions, and garlic are tossed with ranch seasoning and olive oil, then roasted until perfectly caramelized. Once mixed with tender pasta and a generous sprinkle of parmesan cheese, the result is a creamy, tangy, veggie-packed pasta dish that’s simple, comforting, and seriously delicious. Perfect for busy nights, this easy roasted vegetable pasta comes together in about 30 minutes and tastes like you spent way longer in the kitchen.

Ingredients

  • 2 tbsp Dan-O’s Dips Ranch
  • 1 tbsp Dan-O’s Ranch Cheesoning
  • 6 oz (2 cups) pasta
  • 12 oz cherry tomatoes
  • 1/2 yellow onion, cut into chunks (not diced)
  • 3 tsp minced garlic
  • ¼ cup olive oil
  • 1 cup grated parmesan, plus more for garnish (can substitute feta cheese)
  • 2 cups mushrooms, chopped

Preparation Instructions

  1. Preheat your oven to 400°F.
  2. Boil the pasta water: Bring a large pot of salted water to a rolling boil.
  3. Season the veggies. In a large bowl, toss together the tomatoes, mushrooms, onions, and garlic with the olive oil. Sprinkle in the Dan-O’s Dips Ranch and give everything a good mix so the veggies are coated in ranchy goodness.
  4. Spread the veggies out in a baking pan, so they have space to roast (crowding = steaming, and we want that roasted magic). Roast for about 25 minutes, stirring occasionally, until the tomatoes are blistered and juicy and the onions are soft and golden.
  5. While the veggies are roasting, cook your pasta according to the package directions until perfectly al dente. Drain and set aside.
  6. When the roasted veggies are done, remove them from the oven and transfer to a serving dish. Give the tomatoes a gentle mash with a spoon to release all that delicious roasted juice.
  7. Stir in the Ranch Cheesoning and parmesan cheese until everything is coated.
  8. Toss the cooked pasta right into the dish and stir until every noodle is coated in that roasted ranchy sauce.
  9. Sprinkle with extra parmesan cheese (because more cheese is always the right answer). Serve warm and watch it disappear fast.
