Have you ever opened the fridge and seen a little leftover meat starin’ at you? Well, around here, we turn leftover birria into something Dan-O-Myte, Perfect Bite Nachos. These nachos are all about making every single chip count. No big ol’ pile where half your bites are just chips and sadness, every scoop is loaded with birria meat, cheese, and big Dan-O flavor, so every bite hits just right. Because when life gives you leftovers… you make nachos.

Ingredients

  • 2 tbsp Dan-O’s Adobo Seasoning
  • 2 tsp Dan-O’s Chili Lime Seasoning
  • 2 cups leftover birria meat (or any leftover meat), shredded or chopped
  • 1 large bag tortilla scoop chips (about 10–12 oz; enough to fill 1 sheet pan)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Mexican cheese blend
  • 1/4 cup black beans
  • 2 tbsp cilantro stems, thinly sliced
  • 1/2 white onion, finely diced
  • 3 Roma tomatoes, diced
  • 2 jalapeños, seeds removed & finely diced
  • 1/2 jar Poncho’s queso
  • 2 tbsp coffee creamer

Preparation Instructions

  1. Build the Nacho Base: Spread tortilla chips in a single layer on a sheet pan. Fill each chip with leftover meat.
  2. Layer & Season: Season generously with Dan-O’s Adobo. Sprinkle on both cheeses evenly. Add a light layer of black beans. Sprinkle cilantro, onion, tomatoes, and jalapeños evenly over chips.
  3. Make the Queso: Mix 1/2 jar queso with 2–3 tbsp coffee creamer. Season with Dan-O’s Chili Lime and stir until smooth.
  4. Bake at 400°F until cheese melts and chips crisp up.
  5. Remove from the oven and drizzle queso over nachos right before serving. Yum Yum Get Ya Sum!
