Stew Meat Tacos

This recipe combines tender stew meat simmered to perfection in rich Modelo beer, infused with aromatic cilantro, green onions, jalapeno, and garlic. The addition of tomato paste and beef paste enhances the depth of flavor, while Dan-O’s Tac-O seasoning brings a unique and delicious twist.

Ingredients

  • 1 lb stew meat
  • 2 bottles of Modelo beer
  • 1 tbsp tomato paste
  • 1 tsp beef paste
  • Half a bunch of cilantro
  • 3 green onions
  • 3-4 cloves of garlic
  • 1 large jalapeno
  • 1 oz Dan-O's Tac-O seasoning
  • Flour tortillas
  • Oil
  • Pinch of salt
  • Guacamole (for serving)

Preparation Instructions

Prep the Ingredients:

  • Cut the tops off of the green onions, chop them, and set aside.
  • Chop the cilantro roughly.
  • Chop the jalapeno into small pieces.
  • Mince the garlic.

Cook the Stew Meat:

  • In a large pot, add the stew meat.
  • Pour one bottle of Modelo beer into the pot.
  • Add the tomato paste and beef paste.
  • Add the cilantro, chopped green onions, jalapeno, and garlic.
  • Sprinkle in about 1 ounce of Dan-O's Tac-O seasoning.
  • Mix the ingredients well with a spoon.
  • Pour the second bottle of Modelo beer into the pot.
  • Cover the pot with a lid and bring it to a boil.

Simmer the Stew:

  • Once boiling, reduce the heat to a simmer and cook for 3 hours, or if short on time, power boil on high heat for 90 minutes.
  • After cooking, pour the pot's contents into a strainer over a bowl to separate the meat and liquid.
  • Pick out the meat from the strainer and place it back into the pot.
  • Using a fork, pull apart the meat in the pot.
  • Discard the remaining solids in the strainer.

Thicken the Stew:

  • Pour the strained liquid back into the pot with the shredded meat.
  • Let the mixture simmer on low heat for about 15 minutes, or until the liquid reduces and the mixture thickens.

Prepare the Tacos:

  • Preheat a pan to medium temperature.
  • Add a little oil and a pinch of salt to the preheating pan.
  • Place a flour tortilla in the pan and rub it around in the oil and salt.
  • Add the taco meat on top of the tortilla.
  • As the tortilla starts to get crispy, fold it over and flip it.
  • After a couple of minutes, remove the taco from the pan.

Serve:

  • Add a scoop of guacamole to each taco.
