Skillet Roasted Cabbage with Bacon

Have you ever seen cabbage shaped like a cone? Me neither, my friends. I saw these little cone-shaped cabbages at Kroger and knew we had to turn them into smoky, crispy bacon cabbage indoors. The trick is getting the cast iron hot for a good sear, then turning off the heat before baking so the bottoms don’t burn. The bacon cooks right over the top, letting all that smoky flavor soak into the cabbage, while Dan-O’s SPG Tri-O brings the salt, pepper, garlic goodness, and Dan-O’s Cajun Seasoning adds a bold kick. It’s crispy, smoky, savory, and Dan-Good.

Ingredients

  • 1 tbsp Dan-O’s SPG Tri-O (Salt, Pepper, Garlic)
  • 2 tbsp Dan-O’s Cajun Seasoning, divided
  • 4 cone-shaped cabbages, halved lengthwise
  • 2 tbsp high-heat olive oil, divided
  • 3/4 lb bacon

Preparation Instructions

  1. Prep the Cabbage: Preheat the oven to 400°F. Cut the cone-shaped cabbages in half lengthwise. Rub the cabbage with 1 tbsp oil to lightly coat it, then season with Dan-O’s SPG Tri-O and half of the Dan-O’s Cajun Seasoning.
  2. Sear the Cabbage: Heat a 14-inch cast iron skillet over high heat for a few minutes. Add the remaining olive oil to the skillet, being careful not to add too much because it can prevent a good sear. Place the cabbage cut-side down in the hot skillet and sear for 2–4 minutes, or until the cut side has a deep golden sear.
  3. Add the Bacon: Turn off the heat so the bottom of the cabbage does not burn. Lay the bacon over the top of the cabbage wedges, covering them as evenly as possible.
  4. Bake the Cabbage: Transfer the skillet to the preheated oven and bake at 400°F for 20 minutes. Carefully remove the skillet from the oven, sprinkle the remaining Dan-O’s Cajun Seasoning over the bacon, then return the skillet to the oven.
  5. Finish Cooking: Continue baking for 10–12 more minutes, or until the bacon is crispy and the cabbage is cooked through. The total oven time should be about 32 minutes.
  6. Serve: Transfer the bacon-wrapped cabbage wedges to a plate and serve hot with the bacon drippings spooned over the top and Yum Yum Get Ya Sum!
